Sausage Stuffed Mini Peppers

This is one of my most requested appetizers. The recipe is so simple but the flavor is complex. Everyone likes to stuff peppers with cheese but the Italian sausage lends such great flavor and texture to these bitesize beauties. The colorful mix serves up beautifully.

Ingredients

bag of mixed mini sweet peppers

oz cream cheese
1
1b Italian sausage (mild or spicy)
1/2
large yellow onion diced
Directions
1.
Preheat oven to 350 degrees.

In saute pan brown sausage along with onion. If necessary, drain excess grease. Add block of cream cheese and stir until melted and mixed well. May add salt and ground black pepper if you desire to taste.

While the filling is coming together halve the peppers and clean out insides, set aside.
4.
When filling is ready, remove from heat and begin to stuff peppers. I can usually fit a tablespoon or so in each one. Place on foil lined baking sheet.
5.
Bake until peppers are soft, 30-40 minutes.
