Claire's Basil Pasta

Ingredients
1
lb medium shell pasta
3
cloves garlic (minced/chopped)
2
tbsp extra virgin olive oil
1/2
small/medium yellow onion (chopped)
1
can (28 oz) crushed tomatoes
1/2
cup fresh basil
1
cup basil pesto sauce
1
cup ricotta cheese
1/2
cup grated parmesan or Parmigiano Reggiano cheese
1/2
lb fresh mozzarella cheese (shredded)
salt & pepper to taste
Directions
1.
Bring water to boil and cook pasta slightly less than required.
2.
Preheat a medium saucepan over medium heat. When heated add evoo.
3.
Cook garlic then add onion for about 5 minutes.
4.
Add tomatoes. When tomatoes bubble reduce heat.
5.
Add Basil. Season with salt and pepper.
6.
Drain pasta and add to casserole dish.
7.
Add pesto sauce, ricotta cheese and parmesan to pasta and coat.
8.
Pour tomato-basil sauce over top of pasta.
9.
Sprinkle with mozzarella cheese and parmesan cheese.
10.
Place in oven under broiler for 3-5 minutes until cheese is melted.
