Ribs

Ingredients
3-4
racks of ribs
Wood chips (hickory, mesquite, or apple wood)
1/3
cup paprika
3
tbsp ancho chili powder
3
tbsp New Mexican chili powder
2
tbsp ground coriander
1
tbsp cumin
2
tbsp salt
2
tsp pepper
Maple-Horseradish Glaze
2
cups maple syrup
1/2
cup prepared horseradish, drained
2
tbsp dijon mustard
1
tbsp ancho chili powder
Salt and pepper to taste
Directions
1.
Stir spices together and rub on ribs before cooking.
2.
Bake ribs in oven for 2 1/2 hours at 300.
3.
While baking, soak wood chips in water.
4.
Move ribs to indirect charcoal heat with wood chips sprinkled over charcoal for 1 hr. Close lid.
5.
Add new wood chips every 20 minutes.
6.
Apply glaze to ribs last 10 minutes of cooking.
