Crust

cups cooked quinoa - chilled

tsp ground black pepper

large egg
cooking spray
Filling

tsp canola oil

onion - thinly sliced
1
(5 oz) bag of spinach
1/2
cup milk
1/2
tsp salt
1/4
tsp ground black pepper
1/4
tsp crushed red pepper
4
large eggs
2
large egg whites
1/3
cup feta cheese
Directions
1.
preheat oven to 375 f
Crust
1.
combine quinoa, pepper, & egg in bowl
2.
coat 9" pie plate with cooking spray
3.
press mixture into bottom and up sides of pie plate
4.
bake for 20min; cool
Filling
1.
heat nonstick skillet over medium heat
2.
add oil to pan
3.
sauté onion for 3 min
4.
add spinach; sauté for 3 min
5.
remove from heat; cool
Bake
1.
Combine milk, salt, peppers, and eggs in bowl
2.
arrange spinach mixture in crust
3.
pour egg mixture over spinach
4.
sprinkle with feta
5.
bake for 35min
6.
cut in 4ths
