Cream Cheese Filled Pumpkin Bread

Ingredients

cup pumpkin puree

cup brown sugar
1/4
cup sugar
1/4
cup liquid state coconut oil (you can also use vegetable oil as a substitute)
1/4
cup sour cream
2
tsp vanilla extract
2
tsp cinnamon
1
tsp pumpkin pie spice
1/2
tsp ground nutmeg
1
cup flour
1/2
tsp baking powder
1/2
tsp baking soda
Salt to taste
Cream cheese filling
1
egg

oz cream cheese, softened
1/4
cup sugar
3
tbsp flour
Directions
1.
Preheat oven to 350.
2.
Spray a loaf pan with cooking spray and set aside.
3.
In a large bowl add egg, pumpkin puree, brown sugar, sugar, oil, sour cream, vanilla, cinnamon, pumpkin spice, and nutmeg.

Mix to combine.
5.
Add the flour, baking powder, baking soda, salt, and mix lightly.
6.
Put about 2/3 of the batter into the loaf pan and set aside.
7.
In another large bowl, add cream cheese filling ingredients and mix until combined.
8.
Evenly pour filling mixture over the bread.
9.
Top with remaining pumpkin bread batter.
10.
Bake for about 48 minutes or until the top is domed, golden, and an inserted toothpick comes out clean (may have some cream cheese on it and crumbs).
11.
Allow bread to cool in pan for about 15 minutes.
