Nicole Feledy's Lescó (Hungarian Pepper Stew)

Food is a huge part of what defines any culture. Both of my parents were born and raised in Hungary and one of the main things that connects me to the Hungarian culture is the food. If someone is familiar with Hungarian food, they usually know the classic goulash. I love goulash, but lescó is by far one of my favorite Hungarian meals. In the summer, my Grandpa always brings over fresh peppers from his garden. This is my mom’s queue to cook up lescó for the family. If you like sausage, peppers and the taste of paprika, I highly recommend making this simple yet delicious classic Hungarian meal.

Ingredients
1
large onion
Approximately 3 lbs peppers (preferably Italian frying peppers or Cubanelle)
3
large tomatoes
Kielbasa (Hungarian or Polish as an alternative)
2
tbsp oil
2-3
cloves of garlic
2-3
tsp of Hungarian paprika
Salt and pepper to taste
Directions
1.
Clean all the vegetables.
2.
Thinly slice onions.
3.
Core peppers and slice ¼ inch slices.
4.
Cut tomatoes in half and ¼ inch slices.
5.
Sauté the onion until translucent.
6.
Pull off heat and add paprika, stir, and add water – about ½ cup (so it does not burn).
7.
Add peppers, tomatoes, kielbasa, and finely chopped garlic. Stir together and add salt and pepper.
8.
Cook slow until desired firmness (about 20 minutes).
9.
Serve with fresh crusty bread!
