Fried Rice

Ingredients
Low calarle spray oil
4
spring onions, sliced
50
gr frozen petits pois
2
x 280g packs of cooked basmati rice
3
chicken breasts, cooked and shredded
4
tbsp soy sauce
Salt to taste
White pepper to taste
2
large eggs, beaten
Directions
1.
Spray a large wok with some oil and place over a medium heat. Pop in the spring onions and petits pois and cook for 2-3 minutes.

Add in the rice direct from the pack so it's cold going into the pan, mix with the veg then add in the shredded chicken Throw in the soy sauce and toss everything in the pan for 2-3 minutes until the rice is warmed through. Season with the salt and pepper

Make a big circle about the size of your palm in the centre of the rice and pour the beaten egg into it. Leave for 30 seconds or so until it starts to cook.

Using a spatula give the egg a good mix in the centre until it starts to resemble a broken-up omelette, then work it into the rice, making sure it's evenly distributed throughout
5.
Continue to toss or stir for 2-3 minutes and serve in bowls.
