Directions

Preheat oven to 425°F

Place tortillas on ungreased baking sheet. Lightly brush tortillas on both sides with 1 tsp of oil. Bake tortillas 3 minutes. Turn Bake 3 minutes or until lightly browned and crisp.

Drain and rinse black beans.

In large skillet, heat remaining 3 tsp oil over medium-high heat. Add onion, chile pepper, and garlic. Cook until onion is tender. Stir in black beans and tomato. Heat through.
5.
Sprinkle tortillas with half of cheese. Spoon bean mixture over cheese. Sprinkle evenly with remaining cheese.
