Rainbow Quiche Recipe

With plenty of veggies and a creamy egg-cheese filling, this tasty quiche gets great reviews every time I make it

Ingredients
pastry for single-crust pie (9 inches)

cup chopped fresh broccoli florets
1
cup thinly sliced zucchini
1
cup chopped fresh spinach
1
small onion, finely chopped
1
each small green, sweet red and orange peppers, finely chopped

tbsp butter
2
cups (4 oz) shredded Mexican cheese blend
6
large eggs, lightly beaten
1-3/4
cup 2% milk
1/2
tsp salt
1/4
tsp pepper
1/2
tsp each garlic powder, dried basil and oregano
Directions
1.
Preheat oven to 350°.

In a large skillet, saute vegetables (broccoli, zucchini, spinach, onion, peppers) in butter until tender.
3.
In a bowl, whisk the eggs, salt, garlic powder, basil, oregano and pepper.
4.
Stir in cheese and add egg mixture to quiche molds.
