Aunt Carolyn Hanke's Mint Cookies

Aunt Carolyn (Luke's Carolyn) always brought these cookies to Hanke Christmas, and they were requested every year.

Ingredients
3/4
cup Margarine softened
1 1/2
cups Brown Sugar

tbsp Water
12
oz Chocolate chips
2
Eggs
2 1/2
cups Flour
1 1/4
tsp Baking Soda
1/2
tsp Salt
Andes Candies - Parfait Mints
Directions
1.
Mix up Flour, Baking Soda, and Salt and set aside.
2.
Over low heat, cook margarine, sugar, and water until melted.
3.
Keep stirring while Adding Chocolate chips and melt over low heat.
4.
Take mixture off of heat and put in mixing bowl and let cool...you may stick it in the refrigerator.
5.
After cooled, beat in eggs on high speed, one egg at a time.
6.
Lower mixer speed and add flower mixture.
7.
Chill at least one hour in refrigerator. (can also be overnight).
8.
Line cookie sheet with foil.
9.
Roll cookies and bake at 350 11-13 minutes.
10.
Add mints and swirl immediately upon taking out of the oven on top of cookie.
