Carrot Cake

This was always Lona's and Jeff's favorite 3 layer birthday cake! You can make it with or without the coconut in the frosting.

Ingredients

cups Pillsbury's best flour

tsp salt

tsp baking soda
2
cups sugar
2
tsp cinnamon
1-1/4
cups veg oil
4
eggs (one at a time)
3
cups peeled grated carrots(i like to use my food processor)
frosting
1/2
cup softened butter
1-8
oz softened cream cheese
1
tsp vanilla
2-1/2
cups powdered sugar
7
oz coconut (optional)
Directions
1.
Preheat oven to 350 Spray or line 3 round pans with parchment paper

Combine ingredients one at a time in the order they are listed, mixing well after each addition.

Divide batter among 3 pans and bake for 35 minutes,

Let cool for 10 minutes then remove from pans

frost when cool

Frosting:

cream butter and cream cheese, add vanilla and powdered sugar
