Double Baked Cheesy Potatoes

Large Potatoes

tbsp Low-Fat Cheddar Cheese
3
tbsp Greek Yogurt
1
Chicken Breast - Cooked, Shredded
1
Jalapeño
2
tsp Hot Sauce
1
Scallion - Finely Sliced
1/4
tsp Salt
1/4
tsp Pepper
Directions
1.
Preheat oven to 425°F and cover a cookie sheet with foil.
2.
Stab the potatoes a few times on each time with a fork. Place in microwave for 8-10 minutes, until soft inside.
3.
Remove and let sit until cooled enough to handle, cut in half and remove the interior of the potato leaving the skin and a little of the flesh, do this for only 3 of the 4 halves. Remove the flesh from the 4th potato and store for later or just toss out, but keep the hollow potato shell.
4.
In a small bowl combine the potato flesh, cheese, chicken, yogurt, jalapeño, hot sauce, and salt and pepper.
5.
Place on the cookie sheet and place in oven for 10-15 minutes or until the cheese is melted and the centers are warm.
6.
Remove from oven, top with more hot sauce and chopped scallions.
