Vietnamese Sweet Sour Fish Soup Canh Chua

Canh chua or cá nấu is a Vietnamese sour soup indigenous to the Mekong Delta region of Southern Vietnam. It is typically made with fish from the Mekong River Delta, pineapple, tomatoes, and bean sprouts, in a tamarind-flavored broth.

Ingredients
Chicken stock
Sautéed garlic
Sautéed pineapple
Sautéed sliced tomatoes
Tamarind soup base
Sugar
Seasoning by taste, fish sauce, salt ,pepper, and sugar etc.
Raw veggies ( bean sprouts, okra, herbs)
Choice of protein (cat fish, chicken, shrimp)
White rice
Directions
1.
Bring 4 cups of chicken broth to boil, as that is boiling begin to sauté chopped garlic, pineapple chunks and slices tomato rinds. Add Tamarind soup base and sugar to the same pan. Add the sautéed veggies to the chicken broth. Season and taste broth to your liking, add your raw veggies to pot and add your choice of protein and allow to simmer on low heat for 10-15 minutes. Then serve over white rice or vermicelli noodles.
