Coconut Crisps

Cookie Classics. We used some simple tools to make these sweet treats so good-looking: a glass to flatten the cookies to an even thickness and a fork for the ridges.

Ingredients

cups all-purpose flour

tsp baking powder

tsp salt

cup butter or margarine, softened
1
large egg
1
tsp vanilla extract
1 1/2
cups shredded sweetened coconut
Directions
1.
Preheat oven to 375 degrees. Combine flour, baking powder and salt in medium bowl. Beat utter and sugar in mixer bowl at medium speed until light and fluffy. Beat in egg and vanilla. With mixer at low speed, beat in dry ingredients just until combined. Stir in coconut.

Drop dough be level tablespoonfuls onto ungreased cookie sheets. With bottom of glass dipped in flour, flatten each cookie to 1/4-inch thickness, then press with back of fork to form ridges. Bake 10 to 12 minutes, until edges are golden. Transfer to racks to cool. Makes 3 dozen.
