Grandmother Cake

Here is one of the few recorded recipes from Nauni Thomas. Don't be afraid of the Crisco...just use it and don't tell anyone! It's cake, it's not supposed to be healthy!

Ingredients
3
cups all-purpose flour
3
tsp baking powder
pinch salt
2
cups Crisco shortening
2
cups granulated sugar
3
large eggs, room temperature
1
tsp pure vanilla extract
1
tsp pure lemon extract
1
cup whole milk
1
cup walnuts, very coarsely chopped
Directions
1.
Preheat oven to 350 degrees. Grease and flour a 10-inch tube pan or two 9-inch loaf pans.
2.
In large bowl, whisk together flour, baking powder, and salt; set aside.
3.
In stand mixer with paddle attachment, beat Crisco and sugar until well blended.
4.
Add eggs, one at a time, scraping down bowl between each one.
5.
Add vanilla and lemon extracts. Beat until blended.
6.
Alternately add flour mixture and milk to batter in three additions, beating at medium speed just until blended. Fold in walnuts now and pour into prepared pan.
7.
Sprinkle with Sanding sugar or cinnamon sugar and bake 45 minutes for 10-inch cake or until tester comes out clean. Cool in pan 10 minutes, then turn out onto wire rack to cool.
