Sweet And White Potato Gratin

The simple marriage of two potatoes in a creamy garlic-scented cream. Great accompaniment for a Sunday roast or holiday dinner.

Prep
Cook
Serves 12people
Ingredients
6
cups heavy cream (have a little extra on hand)
6
cloves garlic, peeled and smashed
6
medium-sized russet potatoes
6
medium-sized yams/sweet potatoes
Directions
1.
Preheat oven to 375 degrees.
2.
In large saucepan, slowly bring cream to boil with garlic. Pay attention as cream is heating as it seems to boil over the minute you turn your back. Using a larger pan than what you need will also help. Lower heat and simmer mixture for 10 minutes. Remove from heat and discard garlic. Season cream with salt and pepper. This mixture should be a little salty.
3.
While cream is simmering, peel and slice potatoes and yams 1/2-inch thick. Layer in overlapping rows in a large, deep baking dish.
4.
Pour warm cream over potatoes; this should just cover the potatoes, if not add a bit more cream.
5.
Bake until the potatoes are tender, about 45 minutes.
