Chicken Meatball Soup

Chicken broth with chicken meatballs and pasta and vegetables throughout the soup.

Ingredients
roast chicken whole
carrots
potatoes
onions
garlic
parsley
celery
salt
pepper
grated cheese
bread crumbs
garlics finely chopped
parsley finely chopped

Directions

Broth:

Fill a big saucepan with water and add the roast chicken let it start boiling once its started put it on low and take all the froth of the top until it stops.

Once it stops add some carrots, potatoes, onions, garlic, celery, parsley, salt and pepper and let it boil slowly for half an hour.

Check the chicken every 10-15 minutes with a fork.

Meatballs:

When its cooked take the chicken out and take all the vegetables out and put it in one plate, then strain the soup and put in a big bowl or container. Then you mince all the vegetables and put it in the soup.

Then you take out all the bones from the chicken and you mince all the meat and then to make the meatballs you add some grated cheese, couple of spoons of bread crumbs, few garlics cut very fine, parsley cut very fine, then you put a couple of eggs then mix it all together until it is very soft and all mixed together.

Then mould them very little and then put the meatballs into a bowl for later.
9.
Start to cook the pasta and when it is nearly ready to eat put the meatballs in for 1 minute and then it is ready to serve.
