Carrot Pancake

These carrot pancakes are great on the weekends as a new alternative for your family!

Ingredients
1
cup wheat flour
2
tbsp sugar
3
tsp baking powder
1/4
tsp salt
3/4
cup milk
1
egg
2
tbsp applesauce or vegetable oil
1-2
carrots, washed and peeled
Directions
1.
In a large bowl whisk together the dry ingredients (flour, sugar, baking powder, salt)
2.
In a smaller bowl, combine the milk, egg, and applesauce or vegetable oil if using.
3.
Shred peeled and washed carrots on a box grater, in a bowl saving the liquid.
4.
Combine wet ingredients into dry ingredients and stir. Fold carrots into batter.
5.
Over medium heat, spray your griddle or frying pan with cooking spray or a small drop of oil
6.
Use 1/4 cup to measure out your pancakes. Pour batter into heated griddle and cook pancakes until bubbly on top, then flip over until the other side is also cooked and golden.
