Easter Pastiera

A Holy Saturday tradition for lunch! Why don't we make this more often???

Ingredients
1
lb thin spaghetti
6
jumbo eggs, slightly beaten
1
cup grated cheese
1
little salt and lots of fresh ground pepper
vegetable oil
Crisco shortening
Directions
1.
Preheat oven to 400F. Grease a 9x13-inch baking pan.
2.
Boil spaghetti in salted water until not quite cooked. Drain well and mix with a drizzle of vegetable oil to coat and prevent sticking. Allow to cool.
3.
Mix cooled pasta with beaten eggs, cheese, salt, and pepper.
4.
Spread mixture in greased pan, sprinkle with additional cheese and dot with Crisco shortening so top will brown.
5.
Bake for approximately 45 minutes, until brown.
