Pasta Fagioli

Pasta Fazool! That's what we call it! Pleasing four generations in our family is the original peasant food recipe treasured by all. Pressure cooker required.

Ingredients
1
lb dried navy beans
1
can olive oil (tomato paste can)
1/2
cup chopped celery
1
can tomato paste
3
cloves garlic, crushed
2
tsp salt
6
cups water
1
lb mixed pasta
Directions
1.
Place beans in large bowl and cover with cold water by 1-2 inches. Set aside to soak overnight.

Discard soaking water, rinse beans and transfer to pressure cooker. Add remaining ingredients and stir well, being sure tomato paste has dissolved.
3.
Cook for 20 minutes at high pressure.
4.
Cook pasta al dente. Drain and return to pot. Add half of the beans and sauce and stir over low heat until pasta has cooked through and sauce has thickened. Add more beans as desired. Mixture will thicken as it cools.
