Rice Pudding

Dad loves this one! Not everybody wants the raisins, though.

Ingredients
1/2
cup uncooked rice, washed
3
cups boiling water
1 1/2
salt
1
can Eagle Brand Condensed Milk
1/2
cup raising, optional
2
eggs
1
tsp pure vanilla extract
1/4
tsp ground nutmeg
Directions
1.
Put rice, water and salt into heavy 2-quart saucepan.
2.
Cover and cook over medium heat until water boils. Reduce heat and simmer until rice is tender, about 15 minutes.
3.
Remove from heat. stir in condensed milk and raisins.
4.
Beat eggs just until blended. Add slowly while stirring briskly to rice/milk mixture.
5.
Return to LOW heat and cook, stirring constantly until mixture coats the back of a spoon.
6.
Remove from heat. Stir in vanilla extract and nutmeg. Serve warm or chilled.
