Ricotta Pie

Delicious Easter tradition aka "Italian Cheesecake".

Ingredients
FOR THE FILLING

cup granulated sugar
1 1/2
lb ricotta cheese
1
tsp pure vanilla extract
Grated rind of 1 orange and 1 lemon
1
tbsp Cointreau or Grand Marnier
FOR THE CRUST

cups all-purpose flour
1/2
cup granulated sugar
2 1/2
baking powder
3
eggs
1/2
cup vegetable shortening (Crisco)
1
pinch salt
1
tsp pure vanilla extract
Directions

Preheat oven to 375F.

PREPARE CRUST: In large bowl, cut shortening into flour then add remaining ingredients. Mix well. Divide dough in half. Roll one piece to 1/8-inch thickness and use to line 9-inch pie plate. Roll second piece out and cut into strips to form lattice design on top of filling.
3.
PREPARE FILLING: In large bowl, beat eggs and add remaining ingredients. Mix well and pour into prepared crust.
4.
Bake for 1 hour or until crust is golden and filling is set. Cool and refrigerate.
