Spinach Triangles

Ingredients
1
box Pepperidge Farm puff pastry sheets- thawed
1
box frozen chopped spinach- thawed, and excess water squeezed out
1
small onion diced
2
eggs
8
oz crumbled feta cheese
1
tbsp water
Directions
1.
Roll out thawed puff pastry sheets, one at a time, to approximately 14 x 18 size. Cut puff pastry sheet – 16 even squares per sheet.

Meanwhile, squeeze out extra water from frozen chopped spinach. Then, mix spinach with diced onion, 1 egg, and feta cheese. Divide the spinach, onion, egg, feta cheese mixture evenly between squares.
3.
Create egg wash by mixing remaining one egg and water. Using the mixture, brush the edges of the puff pastry. Fold the puff pastry in half, forming a triangle.
4.
Bake 15-18 minutes, at 400. Makes 32.
