Victoria Sponge

Never fails to impress!

Ingredients
250
gr butter
250
gr caster sugar
2
tsp vanilla extract
5
eggs
250
gr self-raising flour
strawberry jam
vanilla buttercream
Directions
1.
Preheat oven to 190C
2.
Cut two 8 inch circles of greaseproof paper and place in the bottom of two 8 inch sandwich tins.
3.
Cream together butter and sugar.
4.
Add vanilla extract.
5.
Beat in eggs, one at a time.
6.
Mix in flour and whisk until smooth.
7.
Pour half the mix into each cake tin and smooth to the edges with a spatula.
8.
Create a slight dip in the centre of the mix, and place both tins on the same shelf of the oven.
9.
Bake for 20 minutes.
10.
Once cooked, free the cakes by running a butter knife around the edge of the tin and turning the cakes onto a wire rack to cool.
11.
Sandwich the cakes with jam and buttercream, and decorate as desired!
