Julia Child's Celery Root Puree

Ingredients

celery roots (about 1 pound each), peeled and cut into medium dice
1
tbsp granulated sugar
water to cover
1
cup heavy cream, warm
celery salt and pepper to taste
Directions
1.
Place the celery root and sugar in a heavy pan and add just enough water to cover. Set over medium-high heat and cook, stirring occasionally, until all of the water has evaporated and the celery root is tender. Add a bit of hot water to the pot if the celery root needs to cook more.
2.
Using a spoon, transfer the celery root and about ¼ cup of the warm cream to ta food processor. Puree the celery root, adding more cream if necessary, until you have a silky and smooth puree.
3.
Season with celery salt and pepper to taste.
