Beltline Bar Burrito

A staple at the annual 4th of July dinner at the cabin! It wouldn't be the same without it! Serve it up with some chips and cheese and you have the ultimate cheese filled meal!

Ingredients
1
lb Longhorn Cheese
1
lb Cheddar Cheese
3
lb Hamburger
1
tsp Cumin
1
cup refried beans
2
cans (10 oz) enchilada sauce (red)
2
cans (8 oz) tomato sauce
3
jars, heinz beef gravy
1
red pepper, chopped
1
onion, chopped
chili powder, to taste
shredded lettuce
chopped tomatoes
3
pkgs. tortilla, largest you can find
optional: chopped green onion and sour cream for garnish
Directions
1.
Brown the hamburger with cumin, red pepper, onion, and chili powder.
2.
Drain the grease from the pan and add the refried beans.
3.
In a separate pan, heat the enchilada sauce, tomato sauce, and gravy together.
4.
Assemble the burritos by placing meat, lettuce, tomatoes, and cheese into the shells.
5.
Fold and place them into the baking dish.
6.
Cover the pan with sauce and top with grated cheese.
7.
Bake 20 minutes, uncovered, at 350 degrees.
8.
Optional: Making only 8 shells = Half the recipe
