Slim Down Scramble

Healthy scrambled eggs served with a Tomato and Basil garnish.

Ingredients

egg whites
1
egg yolk
1
cup spinach
1/4
cup diced tomato
1/4
cup grated zucchini
1
clove garlic
fresh basil to garnish
salt & pepper to taste
Directions
1.
Cook all ingredients (except eggs and half of the diced tomatoes) until the spinach has weltered. In a separate bowl, beat the eggs and then add them to the pan and scramble until cooked. Serve with the rest of the tomatoes and fresh basil.
