Knishes

Nana's knishes go great with any meal!

Ingredients
dough
1/2
cup oil
2 1/2
cups flour
less than 1 cup water
pinch of salt
filling

large onions
3/4
cup oil
9
large russet potatoes
1/2
tsp black pepper
2
tsp of salt
Directions

Dough:

Mix oil, flour, water and salt in food processor
3.
Process until a dough is formed
4.
Put into bowl, cover and refrigerate for 2 hours or overnight

Filling:

Dice and stew onions in oil until soft
7.
Cut potatoes into 2 inch pieces and boil in salted water until soft
8.
Drain and mash potatoes
9.
Add onions and mix together

Add pepper and salt

Let mixture cool

Making Knishes:

Put flour on a board
14.
Roll 1/2 of the dough mixture out on the board to 1/8 inch thick rectangle
15.
Use 1/2 of the potato mixture to form a 2 inch roll on the long half of the dough
16.
Roll dough over the potato and continue rolling down until you reach the end of the dough
17.
Cut log of dough to create 2 to 2 1/2 inch pieces
18.
Pinch both ends of each piece shut
19.
Lay each piece on greased baking sheet with one of the two pinched ends flat on the sheet
20.
On the top end of each piece, press to make an indentation
21.
Cook for 25-30min at 375F
