Kneidlach (Matzo Balls)

You can't have the best matzo ball soup without Nana's matzo balls! Nana says, "This is an old recipe! No one uses chicken fat anymore!"

Ingredients
2
tbsp of chicken fat
2
tbsp of broth, water or skimmed soup fat
2
eggs
1
tsp salt
pinch of pepper
1/2
cup matzo meal
Directions
1.
Combine all ingredients into a bowl
2.
Cover bowl and refrigerate for 2 hours or overnight
3.
Once the mixture is hardened, roll it into 8 balls
4.
Boil water
5.
Drop balls in the boiling water and then reduce the heat to a simmer
6.
Cover the pot and let simmer for 45 minutes
