Cannoli Crepes

An old Italian favorite with a French twist!

Ingredients
cannoli filling
1 1/2
cups of ricotta
1/3
cup chopped roasted almonds
6
tbsp confectioners sugar
chocolate chips and berries (optional)
crepes
1
cup All-Purpose flour
2
eggs
1/2
cup of milk
1/2
cup of water
1/4
tsp salt
2
tbsp melted butter
Directions
1.
In a large bowl, whisk together the flour and eggs. Slowly add in milk and water until combined. Add the salt and butter and beat until smooth.
2.
Heat a greased frying pan or griddle and add a scoop of batter. Tilt the pan in a circular motion so the batter coats the surface evenly.
3.
Cook the crepe for about 2 minutes until bottom is golden brown. Flip with spatula.
4.
Mix ricotta, almonds, sugar, and optional toppings into another bowl. Mix well.
5.
Spread filling onto crepe and roll.
