Ceviche'

Great appetizer. A favorite.

Ingredients

lb of cooked crab

lb of cooked shrimp

cup of lime juice
1/8
cup of diced red onion (finely)
1/2
cup of chopped cilantro
1/2
diced jalapeno
1
can can diced green chilies
1
tsp white wine vinegar
1/2
cup of rinsed black beans (optional)
1/2
cup of chopped cucumber (optional)
salt and pepper to taste
Directions
1.
Dice crab and shrimp. Marinate seafood in lime juice for one hour. After, drain and toss seafood with remaining ingredients. Serve chilled with tortilla chips.
