Ingredients

tbsp oil

white onion, diced

cloves garlic, minced
1
in ginger, sliced OR 1/4 tsp powdered ginger
1
tsp peppercorn OR ground pepper

chicken breasts (healthier - skinless)
5-6
cups low sodium chicken broth (healthier - vegetable broth)
2
chayote (otherwise known as sayote), peeled, cut lengthwise, then slice each half into quarter pieces
1/2
potato, quartered
2
heads bok choy
1/4
cup fish sauce
substitutions and add-ins for extra vegetables
substitute chayote for broccoli
if there is no bok choy at your local grocery store, cut into large chunks 1/2 head of cabbage
Directions
1.
- Saute onion, garlic, ginger, and pepper with oil under medium heat until onion turns translucent
2.
- Add chicken and just enough broth to cover about 2 inches above the chicken
3.
- Allow to boil softly for 10 minutes
4.
- Add chayote and potato and continue to boil until potato is tender
5.
- Add bok choy and fish sauce and simmer for 5 more minutes
