Embutido Filipino Meatloaf

Ingredients

lb ground pork (healthy version: ground turkey, healthier version: tofu "ground pork sausage")
1/4
cup sweet relish
1/4
cup finely shredded carrots (2 small carrots, shredded)
1/4
cup raisins
2
eggs
salt and pepper to taste
optional add-ins
1/3
cup minced ham
1
piece chorizo or sausage
3
tbsp red bell pepper, minced
3
tbsp green bell pepper, minced
1/3
cup shredded cheddar cheese
boiled egg, sliced
this is a simple version for those simply cooking for themselves or on a budget. embutido is it easy to make and you can freeze a pre-made portion and make later
the difference between american-style meatloaf traditionally cooked in the oven, is that filipino meatloaf, or embutido, is steamed, therefore will always come out very moist
Directions
1.
-In a mixing bowl, mix all ingredients, except chorizo/sausage and sliced egg
2.
-Divide mix into 3 cylinders, using foil and add chorizo/sausage and sliced egg close to the center of the cylindrical-shaped mix
3.
-Wrap and close each foil wrap, twisting tightly at least 2 inches at each side
4.
-Place in steamer, for 20 minutes
5.
-After cooling, serve with tomato ketchup, banana ketchup, or gravy (not included in calories)
6.
Embutido can be eaten as an appetizer or as a meal, served with rice.

*Optional add-ins are not included in calories
