Spicy Vegetable Beef Soup

From the first spoonful, this soup will make you start begging for more.

Ingredients

lb rump roast

vegetable oil
1
onion, chopped

garlic cloves

canned beef broth
14
canned stewed tomatoes
1
qt water

package frozen mixed vegetables, thawed

musrooms, sliced
2
celery stalks
1/2
tsp dried oregano
1/2
tsp dried thyme
1/2
tsp dried basil
1/2
tsp parsley
1/4
tsp groud cayenne pepper

rotelle pasta
Directions
1.
Trim fat from roast and cut into 1 inch cubes
2.
Place meat in a large pot over medium heat
3.
Add oil, onion and garlic and cook, stirring, until meat is browned and onion is tender
4.
Pour in broth, tomatoes and water
5.
Stir in mixed vegetables, mushrooms and celery
6.
Season with oregano, thyme, basil, parsley and cayenne
7.
Bring to a boil, then reduce heat, cover and simmer for 75 mins.
8.
Stir in pasta and cook 10 mins more; until pasta is tender
