Utila Corn Rice

Best Corn Rice

Ingredients

ozs oz cans white hominy
12
ozs cans evaporated milk
1
can condensed milk
1
cup regular cow's milk
3
cups white sugar ( or to your taste)
1/4
cup brown sugar
3/4
tsp vanilla
3/4
tsp salt
1/3
cornstarch
Directions
1.
wash off hominy 3 times -- to clear off the "trash" (husk/eyes), then place in large pot and cover with water about 2 inches above top of hominy.
2.
Bring to a boil and boil for 30-45 minutes.

Add 2 cups of white sugar and the salt, and return to a boil and boil on med low until the corn kernels become soft and water is syrupy.(stir frequently). Add milk and evaporated milk and bring to a boil and boil 30 min on low.
4.
Add remainder of sugars, condensed milk and vanilla, and return to a boil. Then turn fire to low and cook 2-3- hours. To thicken sauce mix a "pot" spoon of cornstarch and 1/2 cup water and slowly add to "corn rice", while stirring, allow to cook 10-15 minutes till thickened to your preference. Enjoy with friends and family.
