Potato Zucchini Pancakes

This recipe is also fro the Gluten Free Bible. These pancakes are delicious served with scrambled eggs and salsa.

Ingredients

cups shredded potatoes
1 1/2
cups shredded zucchini
2
eggs
1/4
cup gluten free flour
2
tbsp chopped onion
1/4
tsp salt
1/8
tsp pepper
Directions
1.
Combine piotatoes, zucchini, eggs, flour, onion, salt, and pepper in a medium bowl until well blended.
2.
Heat and grease a griddle with oil or butter over medium heat. Drop potato mixture by 1/4- cupfuls onto griddle. Cook pancake about 3 minutes per side or until golden brown. Serve warm with eggs and salsa.
