Snickerdoodles

This is a recipe I found online and decided to try it for my mom because they are gluten free for my mom. She lovesw them and wants me to make them all the time.

Ingredients

cup sugar
1/4
cup brown sugar

eggs
1/2
tsp vanilla
1/2
cup coconut oil
3/4
cup coconut flour
1/4
tsp salt
2
tbsp sugar
2
tbsp cinnamon
Directions
1.
Preheat oven to 375 F.

In a mixing bowl, beat 1/4 cup of sugar, brown sugar, eggs,vanilla, and coconut oil together.

Ina small bowl, stir the coconut flour and salt together, and then stir them into your wet mixture.
4.
Let it for 5 minutes. If the dough appears too soft or too wet to handle, place in fridge for 30 minutes..

Combine the two toppings (sugar and cinnamon) in a small bowl.
6.
Scoop the dough and roll it into balls.
7.
Roll the balls into the cinnamon sugar mixture-place the cookies on a baking sheet lined with parchment paper and flatten them a bit.
8.
Bake the cookies for 15 minutes. They will darken a bit. Let the cookies sit on a baking sheet for a few minutes before removing them to a wire rack to cool completely.
