Mushroom Risotto

A rich, creamy filling dish.

Ingredients
300
gr mushrooms (a mixture including chestnut, portobello, button)
50
gr butter
8
shallots
3
garlic cloves
300
gr arborio rice
250
ml dry white wine
2
sprig fresh thyme
handful fresh parsley, chopped
50
gr parmesan, grated
olive oil
Directions
1.
Heat a little olive oil in a pan and fry the mushrooms until soft. Set aside for later.
2.
Heat butter in a large pan and add shallots, thyme and garlic. Fry on a medium heat for 15 mins until onions are tender.
3.
Add rice to pan and cook for 1 min.
4.
Pour white wine into the pan and cook until alcohol evaporates.
5.
Meanwhile, make the vegetable stock. Add a ladle of hot stock to the pan and cook on a medium heat until all the stock is absorbed. Continue adding the same amount of stock each time and cooking until the rice is cooked with a slight bite.
6.
Add the parmesan cheese and parsley. Serve immediately.
