Kitty Cat Pancakes

If you're not in the mood for kitty cats, this batter can be just made into circles. My brother loves these pancakes because he says they taste like the original recipe we use.

Ingredients

cups brown rice flour
1/4
cup tapioca flour
1/4
cup corn starch
1
tbsp honey
1 1/2
baking powder
1/2
tsp baking soda
1/2
tsp salt
1/2
tsp xanthum gum
1
cup almond milk
2
eggs
3
tbsp avocado oil
1/2
tsp vanilla
Directions
1.
Combine brown rice flour, tapioca flour, cornstarch, honey, baking powder, baking soda,salt, and xanthum gum in a large bowl.
2.
Stir in almond milk, eggs, oil, and vanilla until thick batter forms. For thinner pancakes, add addional milk.
3.
Lightly grease griddle and heat over medium heat. Pour about 1/2 cup of batter onto griddle.
4.
Cook until bubbles form or until lightly browned.
5.
Repeat with remaining batter. Serve warm with maple syrup, if desired.
