Quinoa Tabbouleh

A healthier alternative to regular tabbouleh. This dish uses quinoa, a grain that's both gluten free and high in protein.

Ingredients
300
gr quinoa
1
tsp ground cumin
1
tsp smoked paprika
sea salt
freshly ground black pepper
1
medium red onion , peeled
1
medium cucumber
2
ripe tomatoes
1
fresh red chilli
1
bunch of fresh mint, leaves picked
1/2
bunch of fresh coriander, leaves picked
1
bunch of fresh flat-leaf parsley
1
tbsp tomato purée
2
tbsp extra virgin olive oil
1/2
unwaxed lemon, zest and juice from
Directions
1.
Place the quinoa, cumin, paprika, salt and pepper in a saucepan. Add boiling water and cook for 15 mins.
2.
Finely chop the cucumber, onion, chilli, tomatoes and herbs. Add to a large bowl.
3.
Add the cooked quinoa, lemon juice and zest, olive oil and tomato puree. Mix well. Season to taste.
