Midnight Mints

The kids will be proud to make this traditional square that they're sure to recognize from holiday snack trays put together by adults. Now that's a true achievement for a young chef.

cup Hard Margarine

cup Granulated Sugar

cup Cocoa Powder

large egg

cups Graham Cracker Crumbs
1/2
cup Finely Chopped Walnuts

cup Fine Coconut
second layer

cup Hard Margarine

tbsp Milk

tsp Peppermint Flavoring

cups Icing Sugar
2-3
drops of green food colouring
top layer

cup Semi-sweet Chocolate Chips

Directions
1.
Bottom Layer: Combine the margarine, sugar, and cocoa powder in a large saucepan on medium. Stir. Heat until mixture boils. Remove 3 tbsp of the mixture to the liquid measure. Add the egg slowly, stirring constantly. Add the egg mixture to the saucepan slowly, stirring constantly, until thickened. Remove the saucepan to the hot pad.

Stir graham crumbs, walnuts and coconut. Mix well. Grease a 9x9" pan. Pack the crumb mixture very firmly in the pan.

Second Layer: Combine the margarine, milk, peppermint flavoring and icing sugar in the bowl. Beat together well. Add a bit more of the milk if needed to make the mixture spreadable. Tint green with green food colouring. Spread over the first layer with the knife.

Top Layer: Melt the chocolate chips and margarine in the small saucepan on low, stirring often. Cool. When cool but still runny, spread over the second layer. Chill. Cuts into 36 squares.
