White Chili

I got this recipe from my niece, Beth, several years ago.

Ingredients

chicken breasts

cans (15 1/2 oz) white beans - drained
1
tsp lemon juice
1
tsp cumin
2
cans (4 oz) of green chilies
1
tbsp olive oil
1
garlic clove, chopped
2
(9 oz) packages frozen white corn
1
cup onion, chopped
Directions
1.
Cook the chicken breasts in water to cover and reserve 1 1/2 cups of the broth. Chop the chicken and add it back to the reserved broth, along with all the other ingredients. Cook slowly over low heat to enhance flavor. Sprinkle with Monterey Jack cheese. Serve with tortillas.
