Spanish Omelette

Easy and inexpensive dish.

Ingredients
500
gr potatoes
1
onion
150
ml olive oil
3
tbsp fresh parsley
6
eggs
Directions
1.
Cut the potatoes into slices and dice onion.
2.
Heat the oil in a frying pan and cook the onion and potatoes on a medium heat for 30 mins.
3.
Strain the potatoes and onion.
4.
Beat the eggs and then stir in the potatoes, parsley and onion.
5.
Heat a little oil in a pan and tip everything into the pan.
6.
When almost set, invert omelette onto a plate. Slide back into the pan and cook for a further few mins.
7.
Slide into a plate and cool for a few minutes before serving.
