Broccoli Casserole

I got this recipe from Vivian Snoddy in the late 1990's. I worked with Vivian at Duke Power. This is a dish that always gets cleaned out for family dinners.

Ingredients

pkgs. frozen chopped broccoli
1
medium onion - chopped
1
(8 oz) package colby or mild cheddar (grate in food processor or grater

eggs
1
can cream of mushroom soup
1
cup mayonnaise
1
package of Ritz crackers
Directions
1.
Heat broccoli just to thaw and drain very well (I actually squeeze the water out of the broccoli). Mix everything together. Pour into baking dish. I use a 9x13 dish. Crush Ritz crackers and sprinkle on top. Bake at 350 degrees for 30 minutes. When making for Sunday lunch, I generally make the night before (except for the Ritz crackers) and put into refrigerator. Right before baking, I crush the Ritz crackers and pop into oven.
