Walnut, Broccoli And Carrot Quiche

A colourful and tasty meatless dish that tastes just as great cold.

Ingredients

gr plain flour

gr butter

gr walnuts

gr cheddar cheese, grated

egg yolk

tbsp cold water
salt and pepper
cayenne pepper

gr broccoli florets

gr carrots
120
ml cream

tbsp milk

eggs

gr cheddar cheese
nutmeg

gr walnut halves
Directions
1.
Preheat oven to 200 C. Sift flour and seasonings into a bowl.
2.
Rub butter in until it resembles fine breadcrumbs.
3.
Add walnuts to food processor and blend until its forms small pieces.
4.
Add walnuts and cheese to dry mixture. Beat egg yolk and water and use to bind the mixture into a soft dough.
5.
Knead gently on a floured surface and roll out to fit a deep 20 cm quiche tin. Prick the base and crimp edges. Chill.
6.
Remove stalks from broccoli and slice carrots. Blanch vegetables in boiling water for one minute, drain and rinse under cold water.
7.
Dry vegetables on kitchen paper and arrange in quiche tin.
8.
Beat cream, milk, eggs, cheese, nutmeg and seasoning together and pour into quiche tin.
9.
Sprinkle with walnuts and cook in the oven for 40 minutes until set.
