Pavlova

A light crisp meringue with a soft chewy centre topped with whipped cream and fresh fruit.

Ingredients
4
egg whites
225
gr caster sugar
1/2
tsp white wine vinegar
1
tsp cornflour
450
ml cream
fresh fruit to decorate
Directions
1.
Whisk the egg whites until they are really stiff.
2.
Whisk in sugar until mixture is stiff and glossy.
3.
Add vinegar and cornflour to the meringue and fold in until incorporated.
4.
Line a flat baking sheet with parchment paper.
5.
Spoon the meringue mixture into the centre, slowly working the mixture into a large circle. Make sure the edges are raised and the centre slightly hollowed.
6.
Cook in the oven for around 1.5 hours until the outside is dry and crisp.
7.
When cool, transfer meringue into a large serving plate. Add whipped cream and decorate with chopped fresh fruit.
