Laksa

A delicious creamy, spicy soup

Ingredients

sweet potatoes, cubed
sea salt
freshly ground black pepper
olive oil
2-3
fresh red chillies, deseeded
3
cloves garlic
1
thumb-sized piece fresh ginger, peeled
1
large bunch fresh coriander
1
tbsp sesame oil
2
limes, zested and halved
2
tbsp fish sauce
800
ml unsweetened coconut milk
300
ml vegetable stock
200
gr rice noodles
300
gr tofu
2
red peppers, sliced
Directions
1.
Preheat oven to 180 C. Drizzle sweet potato with olive oil and place in the oven for 20 mins.
2.
Put chillies, garlic, ginger and coriander in a food processor. Add sesame oil, lime zest, juice and fish sauce. Whiz to a thin paste.
3.
Heat a large wok. Pour in a couple tablespoons of olive oil and add laksa paste. Cook for a couple of minutes.
4.
Add coconut milk, tofu, peppers and stock. Simmer for 15 minutes.
5.
Season to taste with salt and pepper. Add noodles to soup along with sweet potatoes. Simmer for 4 minutes.
