Tomato Soup

This was once Mum's recipe, but I've tweeked it, as I think you'll remember there was no such thing as garlic in her day!

Serves 6people
Ingredients
1
carrots
2
sticks of celery
1
large onion
2
cloves of garlic
1
large tbsp chicken bullion
1
liter water
1
(400 gr) tin of plum tomatoes
salt and pepper
dollop of pesto (optional)
Directions
1.
Roughly chop all the vegetables
2.
Pile everything into pan and bring to boil.
3.
Put on lid and simmer for 45 minutes until everything is soft.
4.
Zap with a stick blender.
5.
Serve.
6.
If feeling fancy - add a dollop of pesto to bowl after serving to make Tomato and Pesto Soup!
