Eggplant Roll Ups

Ingredients

large eggplant cut in 1/4 inch slices
3/4
cup of ricotta cheese
1
cup of spinach
salt and pepper
olive oil
home made tomato sauce
1/2
cup grated parmesan cheese
Directions
1.
slice large eggplant into 1/4 inch slices
2.
Season eggplant
3.
in a pan heat olive oil on medium heat
4.
place egg plant slices in olive oil until soft and cooked
5.
once the eggplant is cooked place a scoop of ricotta cheese and spinach onto the eggplant slice
6.
Roll up the eggplant and put a toothpick threw it
7.
Pre-heat the oven to 350 degrees
8.
place the eggplant rolls into a baking dish
9.
sprinkle the grated parmesan onto the eggplant rolls
10.
place in the oven for 30 minutes until the cheese is golden brown
