Erik's Swedish Meatballs

Genuine Swedish Meatball recipe

Ingredients
1/2
cup of breadcrumbs
1/2
cup beef stock
1/2
cup whole milk
1
egg
salt and pepper
allspice
2
onions
900
gr beef
900
gr pork
butter
boiled potatoes
lingonberry jam
pickled cucumber ( not the salty kind! )
cream sauce: 5dl fullcream, 1 cube beef stock, salt, pepper, some soya sauce, a pinch of sugar and a table spoon of white balsamic vinegar
Directions
1.
Mix ½ cup bread crumbs ½ cup beef-stock ½ cup whole milk If you have stock in cubes like in sweden, dissolve 1-2 directly in about 1 cup of milk.
2.
Possibly add 1 egg if you're worried that your meatballs will fall apart. quite a lot of salt black pepper Kryddpeppar ( thespice you got from me.. don't know the english word. )
3.
Mix everything and let the breadcrumbs soak until it's like a loose paste.
4.
Finely chop two onions ( use a blender if you have ) and add that.
5.
Maybe some more salt and pepper and a hint of beer is always good.
6.
Add finely ground meat, either 50/50 beef,pork or all pork. about 1.8 kg ( 4 pounds ) is probably good for this recipe.
7.
Mix everything well, roll into meatballs and fry on medium heat in butter & some oil
